TROPICAL SUNSET - (a.k.a.Uncle Ernie's II),
appropriately named, is located on East
Shoal Bay Beach. The menu is
simple but they have all the Island favorites and the views are unforgettable.
It's nestled among the palm trees and offers fabulous views while dining. You can sit and relax after a long day at the beach, have a cocktail (or two) and take your time deciding on dinner.
Later we taught the staff a new wonderfully Caribbean drink we created ourselves. It has fast become a favorite of our Anguillan friends. Selma and the bartender both wanted a shot at making this concoction...
1 part spiced dark rum
1 part coconut rum
pineapple juice
It's great on the rocks or frozen.

For an appetizer we had the marinated conch. It was surprisingly tender and seasoned perfectly, delicious! And once again, I couldn't pass up the lobster dinner. If you like garlic, you've got to try the lobster here, it was great!
One of the really nice things about Tropical Sunset and the staff is their willingness to please. They typically close at 6:00pm but I'll tell you a secret...If you call ahead or stop by to tell them you'll be there by 5:45. They'll stay open and you can take your time, relax, and take in the beautiful evening at East Shoal Bay. No pressure here.
